Short answer (meaning unarguably a 'fairy tale') would probably be Little Red Riding Hood (though I have a particular weakness for a lot of Cinderella retellings).

Long answer (meaning one could argue it is folklore, legend, and/or just not a fairy tale) would be Jack Frost.
