I recently finished Crescent City (House of Earth and Blood) by Sarah J Maas, and it totally gave me my mythical creature and magic fix. And as a bonus the second book of the series also just got released so no waiting anxiously!

I am going to second The Name of the Wind by Patrick Rothfuss and event Brandon Sanderson - they both write well and plot well. I will also throw in Ursula K. Le Guin's Earthsea series. She has a fantastic perspective on fantasy.

Fantastic Beasts and Where to Find Them is structured like a reference book, and the movie has a really nice plot. I thought it was an engaging and imaginative book. If you prefer a story with more of a plot I would recommend The Witch, the Sword, and the Cursed Knights, there are less creatures, but it has beautiful word-building.

Blessed Time by Cale Plamann is a fantasy book that I read recently and it was very enjoyable. It basically deals with a time loop situation.
