My favourite thing is to make fried plantains which we call dodo in Nigeria. It involves dicing plantains, adding a little bit of salt to taste, and a little bit of pepper to spice it up then frying in hot groundnut oil, It takes less than 20 minutes though I tend to eat most of it while frying

My favorite quick-dish is one my 8-year old son "came up with" for Mexican night! He loves to make his own version of a 7-layer dip with all the fixins and eat it up with Tostitos Lime Chips. Or we make quesadillas. Or burritos, using those awesome raw Tortillaland tortillas from Costco.
