The way I've cooked fried fish is
1) Clean the fish.
2) Salt the fish.
3) Put it in the hot oil.
4) Take out the crunchy fish.
Today's me is better than yesterday's me.

Also, ginger, garlic and turmeric...inclusive with the spices you have listed above...you will have a perfect fried fish, trust me.

You first wash the fish using salt. Then you cook and grill using spices. You monitor so it doesn't get burnt.

It’s basic. You just need to wash the fish, season it with salt, and then fry it until it’s golden brown

Fish gets cooked very quickly, why do you put it in a pot and cook it before frying it?
I have never done it that way before, I go straight to frying after washing, cutting, and seasoning.

What do you do with the stock afterwards? You say that you preserve it but for what? Do you use it to make a sauce?

Wash your fish
Remove the gills and dirth inside
Rinse the fish again
Season it with salt and seasoning cube( optional)
Fry it or boil it
