Just finished devouring my yummy lunch of brown rice, stewed pork, red kidney beans and fresh salad. Absolutely delish but it took all morning to prepare. Perhaps the prep time made it extra delicious.

I haven't cooked or baked anything today but I am preparing everything I need to make a pork tenderloin medalion recipe this weekend. I went to 5 different stores trying to find demi-glace for the recipe and finally found it at a specialty store. Cannot wait to try the recipe.

Blueberry buttermilk pancakes for breakfast. It's not all that impressive since I start with Hungry Jack pancake mix. Their recipe is adjusted by substituting buttermilk for the liquids, including the oil; doubling the eggs; and adding many washed, drained, and patted dry blueberries.

Today I baked a traditional delicacy common to my community; Goans. It's called Baath. It is a coconut cake which is quite simple to make. Serves well as a tea cake.

It's a Friday cold morning here in Kenya,Africa. I have made porridge for my family. The flour from which I made from is a combination of cassava, arrowroots, peanuts, fish. Then I added milk, honey and lemon to taste.
A cup of this healthy porridge, you don't need a sweater to keep warm.

Last night, I made Vegan Chocolate Chip cookies, with no more than 5 or 6 ingredients. So good, I think there's one left.

I have not had the opportunity to bake or read today. I had to leave the house at 7:15 AM for a meeting that was 2 hours away. But my husband has a spiral ham in the crock pot and it smells fabulous.
