Although I like to cook, I like to bake a lot more. I found a recipe for new Orleans beignets online at pop sugar and I've never made them before, but they actually turned out really great. I'm planning on making Oreo churros tomorrow for my brother to take back to college with him, so hopefully they turn out great.

This Boston cream poke cake is so good and really easy to make. The longer you leave it refrigerated, the better.

You will need 1 box of chocolate cake mix, water,oil,eggs,mayo,1 box chocolate pudding mix, 1 box vanilla pudding mix, milk, 2 jars of store bought frosting. Use a pan for a sheet cake or a rectangle casserole dish and grease with shortening. Follow cake box instructions for baking temperature.

Start with one box of double chocolate cake mix and add ingredients according to box instructions.
Also add to the cake mix one small box of chocolate pudding mix powder(don't add milk) and 1/2 cup mayo. Mix well with electric mixer for 3 minutes. Follow directions on box to bake cake. Once cake is done and before it cools completely, take a wooden spoon handle ( or anything to poke holes at least 1/8 of a inch in circumference ) and poke holes on top of cake about one inch apart,completely over cake.

Mix one small box of vanilla pudding according to package instructions adding milk and mixing well.
Before pudding starts to set-up, pour pudding mixture over entire cake, allowing it to seep into the holes you made in the cake.

Take two jars of store bought frosting ( your choice of flavor) I like to use one dark chocolate and one butter cream white frosting, remove inner seal and lid. Place in microwave. Set microwave for about 30 seconds or less. Check on frosting every few seconds until frosting is melted just enough to pour. Take frosting out of microwave and pour over top of pudding layer. (I like to alternate each flavor, making it look striped or swirled )

I also have taken melted chocolate chips and poured them over frosting layer. Use your imagination to decorate. Place cake in refrigerator for about 1 hour. This cake should be kept refrigerated until served.

It's food prep day in my house! I made pumpkin quinoa chili for this evening, lentil bolognese for dinners in the week, and black beans & roasted vegetables for lunches. I've recently gotten obsessed with batch cooking and food prep, and spending a couple of hours cooking on the weekend has become one of the high points of my week!

I cooked Beef Pasta, creamed mashed potatoes, and bacon style green beans today and those bacon green beans are my absolute favorite thing to have with every meal. I can't do that here at home.
