I haven't tried anything truly crazy but recently I made a lasagna with eggplant instead of pasta noodles. I really liked it a lot.

My craziest recipe would have to be portabella mushroom pizzas. It took forever to clean out each mushroom top to then fill with sauce and cheese. Never again.

I don’t know if it’s crazy but maybe more of a rare thing. I’ve made elk steak fajitas and they are to die for.
